dr. pepper chocolate cake
ingredients
2 cups flour
2 cups sugar
1/4 cup cocoa powder
2 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
2 sticks butter
8 oz Dr. Pepper
2 eggs
1/2 cup buttermilk
2 tsp vanilla
dr. pepper chocolate frosting, optional (see recipe below)
directions
Preheat oven to 350F.
In a large bowl, sift together all the dry ingredients. Set aside.
In another medium to large bowl, melt the butter and then stir in the Dr. Pepper. Add eggs, buttermilk and vanilla, blending completely.
Stir the Dr. Pepper mixture into the dry ingredients. The cake batter will be slightly thin. Pour into greased and floured Bundt pan and bake for 45 to 55 minutes or until cake tests done. Frost if desired.
dr. pepper chocolate frosting ingredients
1/2 stick butter
4 oz Dr. Pepper
3 tbsp cocoa powder
1 tsp vanilla
3 1/2 cups powdered sugar
frosting directions
Melt the butter in a medium saucepan and stir in the Dr. Pepper. Do not bring to a boil. Add the remaining ingredients and mix well. Frosting will be thin, so let sit or cool in fridge before frosting the cake.
notes
This cake (or frosting) doesn't really taste like Dr. Pepper; what you taste mostly is the chocolate and the cinnamon. Yum. I think the cake is plenty sweet without the frosting, or you could sprinkle it with powdered sugar like a giant brownie. I love the texture of this cake, which is moist and kind of spongy.
