eggplant appetizer
ingredients
1 eggplant
1 cup breadcrumbs
1/2 cup parmesan cheese, grated
1/2 tsp salt
1/2 tsp pepper
1 cup vegetable oil
directions
Preheat oven to 375 F.
Cut the eggplant into thin slices.
In a bowl, combine the bread crumbs, parmesan cheese, salt and pepper. Set aside.
In a large bowl, toss the eggplant slices in oil to coat and then coat in breadcrumb mixture.
Bake for 30 minutes, turning once to brown both sides.
notes
To make as little mess as possible, you'll want to cook them on a baking sheet that is lined with foil and sprayed with cooking spray. These are really good, both healthy (eggplant) and junk-foody (cheese!)
