flan

ingredients
3/4 cup sugar
1 (14 oz) can sweetened condensed milk
1 cup whipping cream or half-and-half
1/2 cup milk
4 eggs

directions

Heat the sugar into a 7-inch skiller over high-heat. When sugar starts to melt, reduce heat to medium and continue to cook sugar, stirring occasionally. When the sugar is melted and browned, immediately pour into the bottom of a shallow 1 1/2 quart baking dish, spinning the dish around to coat the bottom and sides. Set this aside to cool.

Preheat the oven to 325F.

Combine the condensed milk, cream, milk and eggs in a blender and processed until thoroughly mixed. Pour into the baking dish.

Place the baking dish into a large baking pan, and pour hot water into the pan so it comes at least halfway up the side of the baking dish.

Bake two hours or until the flan seems firm, and a knife inserted into the center comes out almost clean. When done, remove the baking dish from the hot water and cool, refrigerating for at least three hours before serving.

Really easy. If there are lumps when you melt the sugar, just crush them as much as you can. Stirring too often (usually my mistake) will make it difficult. This flan is actually quite easy and very delicious. Before you serve it, set the bottom of the baking dish into a large bowl or basin filled with warm water, and run a knife around the top edge of the flan. Once you've turned the flan over onto a plate, there's a lot of yummy drippy syrup.
