grilled cheese potatoes

ingredients
10 - 12 small red potatoes, cubed
1 large red onion, chopped
1/2 cup (1 stick) butter, cut into small cubes
2 cups grated cheese
salt and pepper to taste

directions

Preheat oven to 450F.

Lightly spray 13"x9" pan with cooking spray. Add potatoes, onion and cheese to pan and mix gently. Place cubes of butter all around the pan. Sprinkle with salt and pepper.

Cover pan with foil and bake for 35 - 45 minutes. Almost as soon as you take it out of the oven, mix up the potatoes in the pan or while you put it into another serving bowl if you'd like.

I hate when people describe recipes as "decadent" but this one REALLY IS. This is my adapted version of a recipe that originally called for all this to be done on the barbecue. You can easily substitute yellow or white onion for the red. Take the butter out of the fridge just before cutting it up, so it won't start melting in your hands. This recipe called for swiss and parmesan cheeses, but you can use any.
