hot zucchini salad
ingredients
2 tbsp oil
1 onion, diced
4 zucchini, cut into 1/4 inch slices
salt and pepper to taste
1 or 2 tomatoes, diced
2 cups jack cheese, grated
directions
Heat the oil in a large skillet on the stove. Add onion and saute until almost translucent. Add the zucchini and continue to cook until zucchini begins to soften. Sprinkle with salt and pepper if desired. Gently fold in the tomatoes.
Sprinkle cheese over the zucchini mixture, and cover for five minutes. Uncover and mix thoroughly. Serve immediately.

I'm usually not into eating tomato bits, but they're very good in this. And this really is best eaten right away, because melted cheese turns weird when cold. ("Turning weird"... that's a scientific term, you know.)
