mixed veggies

ingredients
2 tbsp olive oil
4-6 zucchini, sliced into 1/4" slices
1/2 bell pepper, julienned
2-3 tbsp pineapple juice
1/3 cup pineapple chunks
1/2 cup cashews

directions

Saute zucchini in olive oil until slightly tender. Stir in bell pepper and pineapple juice. Continue to cook until zucchini is very tender. Stir in pineapple chunks and cashews just before serving.

notes

Yummy in my tummy... you could also stretch this by mixing it into hot cooked pasta (orzo is my fave.) Though, that makes it nearly identical to my orzo salad recipe, but whatev.
