oven roasted potatoes

ingredients
1 package dry Lipton Herb & Garlic soup mix
8 - 10 small red potatoes, quartered
1/3 cup olive oil

directions

Preheat oven to 450F.

Spread out potatoes in a 13"x9" pan.

In a small bowl, combine dry soup mix and oil; drizzle over potatoes, tossing lightly to get an even coat. Cook 40 - 45 minutes.

notes

I prefer to add the soup mix/oil when the potatoes are already in the pan; my mom thinks it's better to do it in a large bowl and then put it in the pan, so you have to figure out which is easier for you. I've found the smaller you cut up those potatoes, the yummier they get, but with this recipe there is a fine line between crispy and burnt so be careful.
