quigley's cookies
ingredients
1 cup peanut butter
1/2 cup shortening
1 1/2 cups brown sugar
3 tbsp milk
1 tbsp vanilla
1 egg
1 2/3 cups all-purpose flour
3/4 tsp salt
3/4 tsp baking soda
1 2/3 cups chocolate chips
1 tbsp plus 1 tsp white sugar
1 tsp cinnamon
directions
Preheat oven to 375F.
In a large bowl, combine the peanut butter, shortening, brown sugar, milk, and vanilla. Beat at medium speed until well-blended. Add egg and beat just until blended.
In a medium bowl, combine the flour, salt, and baking soda. Add to the peanut butter mixture on low speed just until blended.
Using a large spoon or spatula, mix in the chocolate chips.
On a small plate or shallow dish, thoroughly mix the sugar and cinnamon. Roll generous tablespoonfuls of the dough between your hands and then in the cinnamon-sugar mixture, coating lightly on all sides. Bake on ungreased cookie sheets for 12 - 14 minutes or until browned.

This is a modified version of the Jif Peanut Butter cookies recipe. It's a peanut butter, chocolate chip and snickerdoodle all in one. I named them "Quigleys" because my dad was watching some movie with a character named Quigley when I was making these, and my mom kept making fun of me for how I pronounced it. Whatever.
