red potato casserole
ingredients
8 small red potatoes, sliced into 1/4-inch slices
1 small can green chiles, drained and diced
1/2 onion, diced
2 cups cheddar cheese, grated
1 can cream of chicken soup, undiluted
salt and pepper to taste
Preheat oven to 450F.
In a large bowl, mix the potatoes, green chiles and onion. Mix in all the cheese or save some for the top if desired. Stir in cream of chicken soup and salt and pepper until all potatoes are thoroughly coated.
Spray 13"x9" pan with cooking spray, and spread potato mixture inside. Sprinkle with extra cheese if desired. Cover pan with foil and cook for 35-45 minutes or until potatoes are tender.

The great thing about casseroles is that you can chagne the ingredients to whatever you like. This is just plain yummy and cheesy.
