twice-baked potatoes

ingredients
4 potatoes
1 tbsp shortening
2 tbsp onion, diced
3/4 cup evaporated milk
2 tbsp butter, softened or melted
salt and pepper as desired
1 cup cheddar cheese, plus additional if desired

Preheat oven to 400F.

After scrubbing potatoes, pierce several times with a fork and then rub skins with the shortening. Bake for one hour. While they bake, combine the onion and evaporated milk and set aside.

Cut potatoes in half lengthwise and scoop out the insides into a medium or large bowl and set the skins aside. Mash the potato insides and beat in the butter, the onion/milk mixture and the spices if desired. Stir in the cheese and spoon the mixture back into the potato skins.

Bake for 10 - 15 more minutes, sprinkling on additional cheese five minutes before removing from the oven.

Drool! I am a total dunce but these came out great the first time I made them. They got a little overstuffed, but with potatoes that is almost never a bad thing.
