zucchini bread

ingredients
3 cups all-purpose flour
1 tsp salt
1 tsp baking soda
1 tbsp cinnamon
1/4 tsp baking powder
3 eggs
2 cups sugar
3 tsp vanilla
1 cup vegetable oil
3 cups grated zucchini
1 cup chopped walnuts

Preheat oven to 350F.

In a medium bowl, combine the flour, salt, the baking soda and powder and cinnamon. Set aside.

In a large bowl, beat the eggs and add the sugar, vanilla and oil, mixing well. Add the zucchini to this mixture, and then stir in the flour mixture until well combined. Stir in chopped nuts and pour into (2) lightly greased loaf pans. Bake for 1 hour or until knife inserted in center comes out clean.

notes

This bread is just really great. The cinnamon may sound a bit odd, and smells quite strong before the batter is baked, but it gives it a nice sweet flavor. You could probably leave it out without too many issues.
